And here's another question: why does the Lee Carvello ending from Marge Not Be Proud seem to have choppy sounds...?

Ben goes back to Sassy Madison but runs away screaming when Selma comes up.

 

As for your other question, it's because it's a parody of other 8-bit games from that time. They usually had choppy dialogue because of the technical limitations of the hardware.
